Strawberry bliss balls

Spring is here and that means strawberry season! These bliss balls don’t hang around in our house for very long. If it’s the same at your place then substitute the dried strawberries for 3 big fresh strawberries and take the bliss ball to another level (just make sure they are all eaten in a couple of days). If you use fresh strawberries, take out the lime juice, so the mixture is not too wet. The carob nibbles and Acai powder adds some extra antioxidant power to these bliss balls. I used SA home grown Carob Kitchen carob nibbles.

1 cup almonds
¾ cup of mixed dried goji berries, cranberries, blue berries
¼ cup carob grouts
¼ cup dried strawberries
1 tsp acai powder (optional)
1 tbsp. maple syrup
1 tbsp. coconut oil
Zest of 2 limes
Juice of 1 lime
Pinch salt
Place almonds in a high-speed blender and pulse into almond meal.
Add remaining ingredients and blend on medium speed until a sticky paste is formed. If the mixture
is too dry and does not form into a ball, add some lime juice.
Roll into balls and toss in desiccated coconut or carob powder to coat
